Burnt Garlic Spinach & Mushroom Soup
Ingredients:
- Chopped Spinach - 3 cups
- Chopped Garlic - 10-15 garlic cloves
- Chopped Mushroom - 1 cup
- Chopped onion - 1/2 cup
- Butter - 2-3 Tbs
- Cornflour - 1 Tbs
- Black pepper - 1/2 Tbs
- Milk - 1/4th cup
- Creme - 2-3 Tbs
Method to make Soup:
- Heat 1 Tbs of butter in a non stick pan, add 7-8 finely chopped garlic cloves and onions and saute for 2-3 minutes on a medium flame.
- Add mushrooms and saute for 5-8 minutes.
- Add Spinach and saute for 2-3 minutes.
- Add this mixture in a grinder and prepare a puree out of it.
- Pour the puree back to the pan, add cornflour + milk mixture, salt and Black pepper to the mixture and bring to a boil.
- Heat 2 Tbs of butter and add rest of garlic & saute it until it turns golden brown
- Add this butter and garlic mixture to the soup. Add 2-3 Tbs of creme in it.
- Serve it hot with toasted brown bread.
