Burnt Garlic Spinach & Mushroom Soup


Ingredients:
  1. Chopped Spinach - 3 cups
  2. Chopped Garlic - 10-15 garlic cloves
  3. Chopped Mushroom - 1 cup
  4. Chopped onion - 1/2 cup
  5. Butter - 2-3 Tbs
  6. Cornflour - 1 Tbs
  7. Black pepper - 1/2 Tbs
  8. Milk - 1/4th cup
  9. Creme - 2-3 Tbs

Method to make Soup:
  1. Heat 1 Tbs of butter in a non stick pan, add 7-8 finely chopped garlic cloves and onions and saute for 2-3 minutes on a medium flame.
  2. Add mushrooms and saute for 5-8 minutes.
  3. Add Spinach and saute for 2-3 minutes.
  4. Add this mixture in a grinder and prepare a puree out of it.
  5. Pour the puree back to the pan, add cornflour + milk mixture, salt and Black pepper to the mixture and bring to a boil.
  6. Heat 2 Tbs of butter and add rest of garlic & saute it until it turns golden brown
  7. Add this butter and garlic mixture to the soup. Add 2-3 Tbs of creme in it.
  8. Serve it hot with toasted brown bread.
