Litti Recipe

Ingredients:

Dough -
  1. Wheat flour - 2 cups
  2. Ghee - 2 Tbs
  3. Salt - 1/2 Tbs
  4. Baking Soda - 1/4 Tbs
  5. Carom Seeds - 1/4 Tbs

Stuffing -
  1. Sattu - 1 cup
  2. Coriander, finely chopped - 2 Tbs
  3. Ginger Garlic Paste - 1 Tbs
  4. Pickle Masala - 2 Tbs
  5. Cumin - 1/2 Tbs
  6. Nigella seeds - 1/2 Tbs
  7. Pepper Corn - 1/2 Tbs
  8. Carom Seeds - 1/4 Tbs
  9. Lemon juice - 1/2 Tbs
  10. Red chilli powder - 1/2 Tbs
  11. Salt - 1/2 Tbs (As per taste)
  12. Mustard Oil - 2 Tbs
Method to make Litti -
  1. In a mixing bowl, add wheat flour, ghee, mustard oil, carom seeds, baking soda and mix well.
  2. Add water in parts and knead to a smooth soft dough.
  3. Cover the dough and keep aside for 30 minutes.
Method to make the Stuffing -
  1. In a mixing bowl, add all the ingredients (mentioned above) and mix it well.
  2. Add oil if you think the mixture is too dry. The mixture needs to be moist and not dry or too wet.
Stuffing & Making Litti -
  1. Pinch a small ball sized dough.
  2. Press the edges and form a cup.
  3. Place the stuffing in the centre and nicely seal the ends.
  4. Place the litti in Appe Pan ( Appe pan should be pre-heated with oil for 30 secs)
  5. Cover and cook for 10 mins
  6. Flip over and cook both sides until it turns golden brown from all the sides.
Litti can be cooked in various methods -
  1. Appe Maker - Total time 30 mins
  2. Oven - 180 C Total time 40-45 mins
  3. Tawa - Flatten the littis and roast them on low flame, Total time - 35-40 mins
  4. Deep Frying in oil - Tip: Seal them properly.
  5. Tadoor or Grill - Tandoor till they are cooked proper & till you see some charred spots on littis.


Finally the litti is ready to be served with chokha and ghee.
