Litti Recipe
Ingredients:
Dough -
- Wheat flour - 2 cups
- Ghee - 2 Tbs
- Salt - 1/2 Tbs
- Baking Soda - 1/4 Tbs
- Carom Seeds - 1/4 Tbs
Stuffing -
- Sattu - 1 cup
- Coriander, finely chopped - 2 Tbs
- Ginger Garlic Paste - 1 Tbs
- Pickle Masala - 2 Tbs
- Cumin - 1/2 Tbs
- Nigella seeds - 1/2 Tbs
- Pepper Corn - 1/2 Tbs
- Carom Seeds - 1/4 Tbs
- Lemon juice - 1/2 Tbs
- Red chilli powder - 1/2 Tbs
- Salt - 1/2 Tbs (As per taste)
- Mustard Oil - 2 Tbs
Method to make Litti -
- In a mixing bowl, add wheat flour, ghee, mustard oil, carom seeds, baking soda and mix well.
- Add water in parts and knead to a smooth soft dough.
- Cover the dough and keep aside for 30 minutes.
Method to make the Stuffing -
- In a mixing bowl, add all the ingredients (mentioned above) and mix it well.
- Add oil if you think the mixture is too dry. The mixture needs to be moist and not dry or too wet.
Stuffing & Making Litti -
- Pinch a small ball sized dough.
- Press the edges and form a cup.
- Place the stuffing in the centre and nicely seal the ends.
- Place the litti in Appe Pan ( Appe pan should be pre-heated with oil for 30 secs)
- Cover and cook for 10 mins
- Flip over and cook both sides until it turns golden brown from all the sides.
Litti can be cooked in various methods -
- Appe Maker - Total time 30 mins
- Oven - 180 C Total time 40-45 mins
- Tawa - Flatten the littis and roast them on low flame, Total time - 35-40 mins
- Deep Frying in oil - Tip: Seal them properly.
- Tadoor or Grill - Tandoor till they are cooked proper & till you see some charred spots on littis.
Finally the litti is ready to be served with chokha and ghee.
