Ahuna Mutton Curry Champaran Style

 

Ahuna Mutton Curry

Ingredients:

1. Mutton (small pieces) - 1 kg

2. Onion (thin sliced) - 1 kg

3. Garlic Cloves (crushed) - 1/3 cup (25-30 cloves)

4. Ginger (crushed) - 1 inch

5. Garlic Pods - 2-4 full pods

6. Green Chilli - 4-5

7. Dry Red Chilli - 2-4

8. Kashmiri Red Chilli Powder - 1 tbs

9. Turmeric Powder - 1 tbs

10. Garam Masala Powder - 1 tbs

11. Bay leaf - 2

12. Peppercorns - 5 gram

13. Black Cardamom - 3

14. Green Cardamom - 4-5

15. Cloves - 10-12

16. Cinnamon stick - 5-6inch

17. Coriander Powder - 1 tbs

18. Cumin powder - 1 tbs

19. Fennel powder - 1 tbs

20. Turmeric powder - 1 tbs

21. Coriander leaves

22. Mustard Oil (Pre heated) - 200 ml approx.

23. Ghee - 2 tablespoon

24. Salt - As per taste


Method to make Ahuna Mutton -

1. Take a bowl, Add 100 ml mustard oil and all the other ingredients mentioned above mutton, onion, crushed ginger garlic, green chillies and all the spices. Mix it well and keep it aside for 20-30 mins.

2. Add 100 ml mustard oil & marinated mutton in an earthen pot or even metal pot works and seal it properly with dough.

3. Make sure you cook this in the lowest possible flame.

4. Cook for an hour and make sure you keep shaking the pot in intervals to mix the mutton properly.

5. Open the lid of the pot carefully and stir the mutton curry then add 2 tsb of ghee and coriander leaves for garnishing. 

6. Serve it hot with Jeera rice, naan or roti.
